Vegan Butternut Squash Mac n Cheese at our Plant-Based Yoga Retreat

At Mahakala plant-based yoga retreat, we really care about our guests’ well-being and, therefore, want to provide our guests with the most nourishing yet delicious plant-based meals. Every single one of our retreats is a plant-based yoga retreat, which means you cannot find animal products in any of our dishes. The best thing is, plant-based food does not only do miracles to your body and mind, but also tastes truly fantastic! Here is one example of a really tasty & savoury vegan meal we love to make – it is easy, quick and fulfilling and puts a smile on our guests’ face!

What if Mac n cheese was actually healthy…

Many people think macaron and cheese, or so called ‘Mac n Cheese’ is very unhealthy and definitely not vegan. But that is not quite right. We have explored in our own kitchen for a while so that we can fulfill all of our guests’ dreams and satisfy their taste buds and, as a result, we have created this marvellous recipe. Treat your taste buds without scarifying your diet – but be careful, this recipe might get you a little addicted 😉

Living gluten free is the easiest & tastiest thing we know of!

A really good tip for those wanting to live without gluten, is to replace macaroni with either rice, lentil, chickpea or green pea pasta! We have found alternative pasta is actually very tasty and full of good nutrients, making it fairly easy to give up on traditional pasta and other gluten products. In particular, rice pasta and lentil pasta are our new favourite essentials and we cannot recommend enough trying them out!

So here it is, our famous vegan Mac n cheese – ENJOY!!


Vegan Butternut Squash Mac n Cheese

● Butternut squash (peeled and
chopped into cubes)
● Large sweet onion
● Brown rice macaroni or penne
● Reserved cooking liquid from
● Raw cashews (soaked in hot
water for 30 minutes)
● Lemon Juice
● Salt
● Dijon Mustard
● Garlic Powder
● Black Pepper
● Smoked Paprika
● Turmeric
● Nutmeg


1. In a large pot, boil butternut squash with onion
2. In a blender, blend butternut squash and onion with a little bit
of reserved water, raw soaked cashews, lemon juice, salt, dijon mustard, garlic powder, black
pepper, smoked paprika, turmeric, nutmeg
3. Add sauce to your choice of pasta
4. Garnish with sprouts, cilantro, parsley
